Sciuscelle

Thursday is for sciuscelle, a humble traditional dish from Salento made with stale bread, eggs, cheese and herbs. Anna starts by soaking stale bread in water, then squeezing it well. She mixes it with eggs, grated cheese, mint, salt and black pepper until soft and compact. Using a spoon, she gently slides small portions of the mixture into simmering broth or tomato sauce, letting them cook slowly until tender. They are served warm, straight from the pot, with a final drizzle of Leùlia extra virgin olive oil — as Anna always does. A humble dish, made to be shared.

Ingredients

Stale bread Eggs Grated cheese Mint Salt Black pepper Broth or tomato sauce Leùlia extra virgin olive oil

Method

1. Soak the stale bread in water, then squeeze it well. 2. Mix with eggs, grated cheese, mint, salt and black pepper. 3. Shape small spoonfuls of the mixture. 4. Slide them gently into simmering broth or tomato sauce. 5. Cook slowly until tender. 6. Serve warm with a final drizzle of Leùlia extra virgin olive oil.
